Allow me to share a great Irish recipe in honor of St. Patrick’s Day
- 3 lbs russet potatos
- 1 can 15 oz tomato sauce
- 1 stick butter
- Milk
- 8 carrots
- 8 stalks celery
- 6-8 medium onions
- 24-32 oz ground turkey
- 4 cloves garlic
- Olive or grape seed oil
- Salt
- Pepper
- Peel and slice (fine slices) onions, carrots, celery
- Place 1/3 stick butter and grape seed oil (or olive oil) in large frying pan
- Place smashed garlic in pan and brown
- Add carrots, Celery, and onions, and cook until it is fairly soft.
- Push this to one side of the pan
- Add turkey to other side of pan.
- When turkey is cooked, (the red is gone) mix in with carrots, etc
- Add salt and pepper to taste
- Add tomato sauce. Cook until somewhat thick. Not runny
While this is cooking, peel, wash and slice the potatoes
When you cook the potatoes, use cold water and just enough water to cover them. If you use too much water or its warm, they don’t cook right and they are ruined.
Add the rest of the butter and milk to mash the potatos.
In a corelle pan with sides sprayed, add the carrots, celery, turkey, etc.
Top with mashed potatos
Bake at 375 for 45 minutes
